Does anyone happen to have any experience with installing or riding a scrambler with the small little windshields? Looking to buy one and start some small trips across Texas but not sure if it will help with any resistance. Thoughts? Advice?
I was thinking something like the photo here.

Doubt its going to help much. Maybe post in the scrambler forum for more experienced scrambler based results. My experience is that a windshield gives you +/- 6" of deflection past the edge. For example, my gen 1 multi shield goes aboot to center of my shoulders. I get a shot of wind right in my helmet. I combatted that with getting a good helmet that had good aerodynamics (shoei GT AIR). That would be my recommendation to you as well. The scrambler ain't a tourer, and a flyscreen ain't gonna change that. Spend the money on a good helmet, and live with the compromise.
