I've seen a few that I like, but they don't have folding toe rest / pegs. I'm planning on street use only, so gotta have my kicker?

Looks like some of the later w/c, desmos singles have toe and peg folding. Are those, or manufactured versions available?

But the Mach 1 has a kickstart that goes behind the peg?

Aftermarket rearsets with folding pegs are available. Here's one solution for the brake lever toe peg

This bike came with no foot controls at all, so I don't know what the "correct" setup is supposed to be.

Looks like modifying the kick lever may be easiest / most cost effective solution, unless I find full-folding rear-sets for a good price.

Any leads for a source on them? My casual, half-assed searching hasn't found any...

See them listed in a catalog I have from way back, emailed them to see if they still have them, waiting to hear back.

Any other vendors known to stock them?

Again, pardon my idiocy, It's a Monza not a Mach 1...

Anyway, I did find some rear-sets with folding foot / toe rests for brake side:

Ducati Folding Rear Sets, 250 350 450

Not the most beautiful things I've seen, but kit looks pretty complete and will get the job done.
