Finally got my sprockets/chain in and am going to begin work on replacement tomorrow. I wanted to check the placement of the eccentric and according to section8 and others, it should be at 5:30 or 6:00. How is this referenced? I understand that the centerline of the stub should be at or below the centline of the bearing holder. But what does it mean 5:30/6:00?

It means the axle position should ideally be between the 5 o'clock and 6 o'clock position relative to the hub, when looking at the wheel on the left side of the bike. i.e. the axle should be just forward of the bottom-most position possible.

Unfortunately, with a stock 748 sprocket and chain combo, a new chain of the correct length will be too short to allow the axle to be further back than about 8:30 or 8:00 position (i.e. the axle will be higher than ideal, relative to the hub.
It's difficult to get the optimum rear ride height that Section8 suggests, with the stock 748 gearing and chain and the stock link rod.
