So finally sorted out my dilemma of mirrors. Ended up with the Highside Victory EVO, they are good price well manufactured and come with adapters from most inner sizes of bars.
Funnily enough I ended up using just the original OEM bolt together with its bushings in order to set it into the bars while keeping the hand guards it goes through easily. The mirror is well fixed like this.

These mirrors are quite popular around my area and Germany have seen many BMW owners mounting them. They are big enough, homologated for the EU and look decent.

I like this.

So you just took the screw out of the end of the bars, and these mirrors literally just screwed right in?

Bringing this one back from the past. I know some like and some don't like bar end mirrors for the Hypermotard. I'm leaning more towards the like. I want to keep the handguards as I like the look (flimsy plastic and all) These Highsliders look nice but something smaller would be nice. The CRG Arrows are an option but I really like the look of the bar end mirrors on the Triumph Street Triple RS https://shop.triumphmotorcycles.com/mirrors/id-A9638117/Bar_End_Mirror
They are pricey at $130 each. I will see if I can find out if they would work.
