Mine were getting pretty red too (although not that bad during day light  ), but that's you get to run lean stock in order to pass all the crappy emission tests...
Change the exhaust and ECU, TPS reset, and CO2 test, etc.

No time for carbon built up .Am shure Ducati know their engine, they did some test before they are for sale on the market.

Cold air is going to lean that thing out even more. That isn't anything new to me on my Rhino. The header glows red when I ride at night. Even when jetted properly, it still glows when running hard like in the dunes where your foot is in it all the time.
I would recommend a run on the dyno, that does seem a little extreme though. It is probably just the idle position. Maybe you should consult with Joe the Plumber.
