Installed a PC III today and there was a big difference in power delivery, much smoother.

Stock exhaust or aftermarket? What, if any, impact on gas mileage?

I thought that the PCIII didn't change anything below 20% throttle with the stock ECU. I'm assuming you have a performance ECU. Yes?

Would that be an easy tool to use for a newbie to Electonic ignition and ECUs? I have a DP ECU and full system.

Bike is stock. PCIII installed ahead of full Arrow system, new filter and box mod which should be in by next week.
The power delivery down low was what I most noticed right off, just makes it easier to ride, especially with a passenger - I was too often trying to minimize that abruptness - now dont have to think about it at all.
So worth it and easy install.
With pipe install, will be on dyno to get all tweaked just right, will report back on how that goes.

How did you handle the O2 sensor issue with the stock ECU?

Have not. Admittedly I do stall the bike while idling at a light every once in a while and do get that popping at deceleration. Hoping that mods installed soon will help. Bike is much smoother with the PC but with stock exhaust and all it feels too restricted. So cant wait to let it inhale and exhale the way it should.
