Brand New Hyper owner here
I just brought mine home last saturday. I am very proud. I came from a Japanese twin (TLR). I loved this thing as soon as I read about it and couldn't sleep a wink once I test rode it. I have to get used to the different riding position, but that will be a easy learning experience.
I bought a full termi with it. It comes in a week or so. I am going to install it myself. I am a decent do-it-yourselfer. My question is with the ECU. Is it really required to go to the dealer for it? I can't see paying $75/hour if it isn't necessary.

Do some yourself.........but
You can install the exhaust yourself, and even install the ECU yourself,
just make sure that the battery is NOT connected when you remove and
install the new ECU, after that, you will have to take the bike back to the
Dealer to have the TPS reset to make the bike run right, as this requires
special equipment. Also when the dealer resets the TPS the bikes warrantee
should still be intact. The going cost is $60 to $100 dls. ENJOY! Alex

cool, I need to take it for it's first service (600 mile) anyway. Might as well do it all in one shot. Now on to some other juicy add ons.

Any insight as to the consequences of neglecting this step... specific symptoms, rather than simply 'frying the ECU'??

No, just a precaution to prevent a short, so you don't FRY it! electronics can
be finickey. Aloha Alex

My take on setting the TPS, like initialing a new hard drive, so the new chip and the rest of the ECU are on the same page with the sensor.

I never had a problem with my ECU install and I did not disconnect the battery. Again, it is probably safe to disconnect it. I got my TPS reset, throttle bodies sync'd, fuel trim set, and dyno run for $160. A TPS set alone should be under $50, some have said they got it done for less than $25.

Has anyone done their own Throttle body sync? I have a vacuum guage. I have done it on all of my other bikes. The TPS as well?

If you have vacuum gauges, you can synch your throttle bodies but unless it idles crappy and you have a CO gas analyzer, I would leave it for now. The reason for this is that you must screw in your airbleed screws all the way in to synch the throttle bodies, then use the CO gas analyzer to adjust the air bleeds.
To reset the TPS, you should have your dealer do it or purchase the VDSTS Scan tool from Technoresearch for a couple of hundred bucks. The scan tool will also allow you to adjust the fuel trim if you have a DP ECU. Again, you will need a gas tester to do this properly, you should adjust the fuel trim to achieve a CO reading between 3 and 6% (stock is about 1.5%). Your dealer may or may not be willing to do this because of emissions laws.
There is a bunch of info already posted on mods. Just do a search and you'll find some good info and dyno charts.
