I've only ridden the PCH south of San Fran so I can't comment on the "northern" section you will be riding. I gather this is your first long trip?
The Hyper is pretty reliable. The only thing I'd worry about in terms of breakdowns is a flat. On long trips I take tire repair kit and mini air compressor so if you do get a flat (knock on wood) you can fix it on the side of the road. Take along some chain lube, tools (allens, wrench or two), bungee cords, duct tape, doesn't hurt to have a AAA card as well.
Packing it all in can be a challenge on the hyper. I use a mini tank bag and bungee a waterproof duffel bag on the back seat and it holds all my stuff for a 7-10 day ride.
Dress in layers and make sure your gear is waterproof. An electric vest does wonders.
I have the large gas tank, sargent seat, and windscreen. The last two are easy to take off/on. Large tank is more of a commitment but a huge plus if traveling far.
Before heading out make sure your bike/tires/chain tension are all good to go. Let others know your route. Take your time, stop if you get tired, and have a good time!
