Sport Rider magazine did a great article about optimal shifting points based upon effective torque to the ground. Check out

They provided a spreadsheet to try it yourself so I input the dyno data for a 749s from Moto One and the spreadsheet shows the results.
The graphs in the spreadsheet will also show you speed by RPM in each gear so it might help with calculating optimum gearing for racing or trackdays.
