The 900 MHE has a trellis on the back. I'd bet it's a direct bolt on. Probably costs $$$$$$$

Sounds like a really challenging and expensive mod, going from dual shocks on your GT to a single sided trellis swingarm. Brakes, suspension, all need to change, maybe even the sprocket set-up.

I think it would be much cheaper to start with a Monster S2R1000DS and then mod it into a classic café racer, rather than to go the other way around.

Are you talking about single-sided or double-sided? As noted above, for a single-sided swingarm, the MHE used a nice tubular model. You would need to change shock lengths for that.

If you're thinking about a double-sided swingarm, then you could look at the Bimotas, some of which use the DS1000 motor and a trellis-style swingarm that is very attractive. It uses a centrall-mounted single shock, thus it would also require some fabrication (either to the frame or to the swingarm) to make it work.

Both are likely to be pricey.
