Which of the 3 material options (Snake Skin, High Fusion, C3 Grip) do you have and why did you choose it?

I have the DP cf top and side protectors.
Grip is good and they match the rest of the cf on my '11 Sport model.

I got the snake skin simply because the texture appealed to me. I think it just comes down to preference. They stay pretty clean, i.e., they wash off well and don't detract from the bikes looks.
FWIW, I use the DP carbon on the top surface, although this one's just for looks as the tank's shape really isn't conducive to having a traditional top protector for belt buckles, etc.

I have the TechSpec snakeskin versions on my 848 and really like 'em a lot -- plenty 'o grip for those "hang on to hang off" moments, and I think they look pretty cool, too. Now that you mention it, I need to get a set for the Multi as well. (Thank God you people are here to help me spend money; I was in danger of being thrifty there for a moment.)
