asphalt id say the multi. dirt or gravel take the GS. The GS is one sweet dual sport bike!
The multi is great if mainly asphalt.

As others have said- both are excellent bikes, but for different mixes of roads. The 800GS is a true "adventure bike"- it will get through just about any off-road conditions, yet be more than competent on pavement. The Multi 1200 is a true superbike with long-distance comfort on pavement, and can handle dirt roads just fine. If I were heading across Africa, I'd take the GS since most of the roads would be dirt and worse. If I expected 70% or more of the roads to be paved, and the rest mostly dirt, I'd go Multi.

You've already got two street bikes. Get the GS.

+1
It depends on how and where YOU are going to ride it. Can't go wrong either way if you pick the bike more suited to what kind of riding you'll really do. Think of the MTS1200 as a long travel 1198 with comfortable seating position. It's perfect for the curvy, fast but often frost-heaved asphalt roads here in Alaska, and handles the occasional dirt and gravel road quite well. But if I were to ride off-road, I wouldn't kid myself into thinking the MTS is suitable. The F800GS is definitely suitable for off-road riding.
