Fill'er up? Or not?
Last time I parked the 1200, I filled it and added Stabil (the new stuff that also claims to stabilize ethanol). Thanks to an unexpected warm spell, I just got back from 150 miles . The low fuel light came on just as I got home, so I'm guessing there's about a gallon left. Let's assume it might sit for a while. Should I leave it as is, or top up the tank and add more Stabil?

Top and add (a little bit) more Stabil. And keep on riding it, and topping it, until the snow says no.

This ^
Fill and Sta-Bil-ize a 5 gal. jerry can.
That way you get the mix correct.
Top Millie as needed.
Leaving room in the tank only invites condensation.

Here's what I'd do. if you store the bike for the winter I'd fill the tank with race fuel, no ethanol in it, 100 octane at the pump.
If you still use it, add stabil marine, made for ethanol issues.
Also, why don't you get a quart of Caswell and coat the tank so you'll never have that problem again?
$.02!

Empty or darn near it. Better safe than sorry. No worries about condensation and rust since its plastic.

I understand where you guys are coming from but respectfully, I'm not sure I agree. If you're in a very dry climate where condensation isn't a factor and there's ethanol in the local fuel supply then I agree. If however, you're plagued with temperature drops and rises every time you pull your car in and out of the garage (as here in Alaska and other northern states), then you're going to get condensation. Granted I'm not worried about rust in the tank, but I am worried about the puddle of water that will surely form in the vacuum of an empty tank. I want my bike to run when the roads clear up, not spend time changing fuel filters and fretting about how it's stalling and won't start. Anyhow, my $0.02.

You can always throw in a underamour shirt that you don't plan on using anymore. It'll suck up the little bit of moisture moisture. Hear it works from the local racers that do this with their metal tanks.

Plastic tank, metal tank. Doesn't really matter to me, I've always filled the tanks up and added a bit of sta-bil, or more recently the Startron stuff, if I'm not going to ride for a while. Fortunately, that's not much of a problem now that I'm down to one bike.
I also do this if I'm not going to mow, weed eat, or leaf blow for a while too.
