It's mostly guys that will make a comment, but a lot of women look at the bike.
The one comment i received that the really took me by surprise came while sitting at a light. A BMW sedan pulled up next to me and the driver got my attention and complimented on what a nice bike i had. She was an older lady, late 50's, dressed very nice and classy. I said "thanks, nice car", she smiled, we drove away. I was like, wow, she knew what i was riding, that's cool.
Just last weekend a couple of kids about 12 or so yrs old walked by and one of them asked if the bike was european. I affirmed it and he said what a cool bike it was. As they walked away he was telling his friend what awesome bike it was and even pronounced the name correctly.

I always give a thumbs up when I pass an old musclecar on the road while riding my Ducati. I've never failed to get a horn, wave, or 5K rev, it's a guy thing.
What year GTO? I'll need a list of options too....sort of like the list stats on a Playboy centerfold model.

Triple white convertible '67 Goat. Ground up restoration....to be driven. Balanced/blueprinted 400 with tri-y headers, edelbrock intake/Holley carb and electronic ignition, and a torquey cam. Upgraded disc brakes, huge radiator, and upgraded suspension. Restored to be driven.
I got a pic of her somewhere around here....

I ride a Sport Classic so it's a straight up Geezer Magnet. You wanna meet a bunch of 70 year old dudes? This is your machine! Not that bad though. A lot of them have some pretty good stories about the glory days. Some guys you would never guess even touched a bike by looking at them.
Of the handful of bikes that I've owned, the one that garnered me the most female attention was the humble little red Ninja 250R I rode in college. That machine WAS a chick magnet. I've been told it was because it looked fun and unintimidating. I don't know. But if you looking for an Italian machine that will attract women, I've got a feeling that you'd fare much better with a vintage Vespa than even the most badass Ducati.

And just about every female shown a Ninja 250 thinks it is adorable.

Like most things and women; they are attracted to sport bikes but few have the gusto to talk to you about it because its a game. Few are that bold; however if you watch for it you can see them staring at you
As for original question, everyone from kids/cops to girls and old guys

Best story I've got:
I was filling my Hypermotard at a gas station around the corner from my house one Saturday morning. A nice old woman comes up to me (she had to be in her 70s) and asks me about the bike and if I'm Italian because I ride a Ducati. I say that, yes, I am Italian and she starts telling me how it's nice to see a handsome, young Italian boy riding a beautiful Italian motorcycle.
She then starts hitting on me and proceeds to tell me about how she has an old Vespa that she can't ride anymore, but that she would love for me to come pick her up at her house to take her for a ride on the Duc.  SHE'S 70!!!! She wrote her telephone number down on a post-it note and told me to give her a call sometime.
It was flattering and terrifying at the same time.
